Kabirizi sits in the hills above Lake Kivu, in a region known for the kind of careful, methodical work that defines great Rwandan coffee. Cherries are hand-picked at peak ripeness and delivered to the station the same day for sorting, depulping, and a traditional washed fermentation in clean water. After fermentation, the parchment is laid out on raised beds and turned by hand throughout the drying window, which protects the cup's clarity and gives the coffee its rounded, gentle character. Washed Rwandans are some of the most reliable coffees in the world for everyday brewing, and this one is a good example of why. It's the kind of bag you can hand to a friend who's "not really a coffee person" and watch them come back for a second cup.
